Purple Rain is proof that sometimes the grain steals the show. Crafted from an organic climate blend (Eileen Multi-Color Spring Wheat) from Hillside Grains out of the Wood River Valley in Idaho, this sourdough wears a soft lavender glow and delivers a subtle nutmeg-kissed finish, all straight from the wheat itself. No tricks. Just terroir with flair.
This flour is a beautiful rebel. Instead of a single variety, it’s a blend of seven wheat berries planted together in the same field. While most wheat grows in monoculture lanes, this crew thrives on diversity. Each season, the grains respond to the year’s weather, and the strongest flavors rise to the top. Nature runs the audition.
We’ve only just begun playing with this flour, and already it feels like a favorite instrument in the band. Bright, expressive, a little unexpected — Purple Rain is the loaf that lets the grain sing.
This loaf is pure Idaho at heart. Our flours are grown and milled outside of Sun Valley, by a farmer and miller that practices regenerative agriculture — restoring the soil naturally, no extra fertilizers needed.
